SAFI - Espresso

Variety: Typica
Process: Washed

Safi is a shot made for first thing in the morning. Grinding the beans, pulling your shot, that first sip waking up your senses. Full and rounded in the cup, with a crisp, clean acidity that keeps every sip clear right to the end. Ripe muscat grape and soft turrón up front, settling into a long finish of Assam tea.

The name comes from Turkish, a language that runs through our roots. Safi means pure, clear, unadulterated. Turkish is expressive and full of character, a language where one word can carry a whole feeling, and we wanted a name like that for a coffee just as expressive.

Safi also works beyond the morning, in your cocktails. Its depth accompanies the drink and rounds it out, making it more interesting. It’s one of our rotating single origins, roasted in small batches, so it won’t be around all year.

Origin

Safi comes from Jampit Coffee Estates on the Ijen Plateau in East Java, Indonesia. The estate farms between 900 and 1,800 metres, on land it has cultivated since the early 1900s. This lot is 100% Arabica, from Typica plants grown on those high slopes.

Engagement

The team at Jampit puts serious work into plant conservation and restoring their land, and that same care shows in how they process their coffee. For this lot, they chose a full wash: the fruit is removed before the beans dry, giving Safi its crisp, clean cup. We roast it at 4 out of 5, enough for full body without losing that clarity.
