This cake is an all-time favorite - and yes, we’re a little obsessed with the LEMON POUND CAKE from BLACK APRON too!

A true classic in our CODOS cafés and the perfect companion to a cappuccino or filter brew. A cult favorite in the U.S., the LEMON POUND CAKE charms with its sharp citrus zing that melts into a delicate freshness, all wrapped in a rich, buttery crumb.

We asked the bakers at BLACK APRON if they’d share the recipe - and lucky us, they said yes. 🤤

Lemon Pound Cake Recipe
For a 26 cm bundt pan

Ingredients:

  • 225 g butter

  • 400 g sugar

  • 6 eggs (medium)

  • 60 g lemon juice

  • 500 g flour

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp salt

  • 1/2 tsp vanilla extract or seeds from one vanilla pod

  • 225 g sour cream (or crème fraîche)

  • Zest of 2 lemons

  • Juice of 1 lemon (for finishing)

How to Lemon Pound Cake: 

  1. Grease a Bundt pan and dust it with flour.

  2. Cream the butter and sugar with a hand mixer until fluffy. Add the eggs one at a time, beating well after each addition.

  3. Squeeze the lemons to get about 60 g juice. Add both the juice and zest to the batter and mix well.

  4. In a separate bowl, combine the flour, baking powder, baking soda, salt, and vanilla. Gently fold the dry mix into the wet mixture - be careful not to overmix.

  5. Stir in the sour cream until the batter is smooth and even.

  6. Bake at 165°C (top/bottom heat) for 60-75 minutes. Use a toothpick to test - it should come out clean.

  7. While the cake is still warm, carefully remove it from the pan and brush with the juice of one lemon.

  8. For the glaze, mix 250 g powdered sugar with 4-5 tbsp lemon juice. For a thicker glaze, use less juice. Adjust the texture to your liking.
